Yuzu Gama is a Japanese salad dish.

Yuzu fruit is hollowed out and used as a bowl to hold shrimp & shiitake mushroom.

Cooking Tips for Yuzu Gama

To make Yuzu Gama, you cut the top off of a Yuzu fruit. You dig the flesh inside out with a spoon, leaving the rind intact, then set the hollowed-out fruits aside for a moment.


You then squeeze the juice out of the flesh, and discard the flesh. You will get about 1 teaspoon of juice. A sauce is then made from the juice by mixing it with a few drops of vinegar, 1 1/2 tablespoons of white miso, 1 teaspoon mirin and 1 tablespoon of dashi jiru broth.

In each hollowed-out Yuzu, you put 3 shrimp, half a fresh shiitake mushroom, 1 mitsuba (aka "Trefoil") leaf and a few drops of sake. You zap the stuffed fruit in a microwave for 60 to 90 seconds, depending on the strength of your microwave. You remove the stuffed fruit from the microwave, pour the sauce over the contents inside, zap the stuffed fruit again for 30 seconds, then serve.

Only the contents are eaten; not the rind itself.
