White Chocolate
White chocolate is not considered real chocolate -- not that that has deterred its fans any. To be considered chocolate, chocolate has to contain cocoa liquor, which White Chocolate doesn't. Instead, it is made from cocoa butter, which is a fat from the cocoa beans.

Some manufacturers substitute other fats for the cocoa fat. When buying white chocolate, to get the real thing look for cocoa butter listed among the ingredients. As of 2004, the FDA (Food and Drug Administration) in America was considering requiring that to be labelled White Chocolate, the product would need to contain at least 20% cocoa butter.

Cooking Tips
White chocolate must be melted more slowly than regular chocolate, or the milk solids in it will burn.

Nutrition
White Chocolate does not contain any caffeine. The caffeine in chocolate is in the cocoa liquor, which does not go into White Chocolate.
