Viscous Vegetables
© Copyright 2009. All rights reserved and enforced
Some vegetables release a mucilaginous liquid when cooked. They are sometimes described as becoming "viscous", or in plainer-terms, "slimy."
The viscosity allows them to be used to help thicken dishes.
