Tillamook Cheese
Tillamook is the name of a brand of American cheddar.

It is made from thermalized milk, not pasteurized. The milk is heated to only 152 F (67 C.) Therefore, it is aged a minimum of 60 days as per American law for unpasteurized milk cheeses.

It is sold in three ages: medium (60 days), sharp (9 months), and Special Reserve Extra Sharp (15 months), and is made in white and orange.

Tillamook Cheese is made two miles north of Tillamook, Oregon on Highway 101 by the Tillamook County Creamery Association, a cooperative owned by farmers, and named after the town and county.
