Tarapatapom Cheese

Tarapatapom is a fresh, unaged cheese with a layer of carmelized apples in the middle.

It is made from 75% cow's milk, 25% goat's milk. Both milks are unpasteurized. The apples come from the cheesemaker's orchards.

There are two layers of cheese, and in the middle, the carmelized apple.

The cheese is made by Fromages Chaput et Les dépendances du Manoir in Brigham, Montérégie region, Quebec. It is then aged by a company called "Les dépendances du Manoir."

Tarapatapom Cheese was the first cheese they made.
