There are two types of sesame pastes. Both are reminiscent of peanut butter, though the one called Tahini tends to be much thinner. You should be able to find Tahini just about anywhere these days, but if you get really frustrated trying to find Tahini, just keep reminding yourself of the fat content you're missing out on (see below.)

Sesame Butter

The Asian kind is called Sesame Butter, and is made from untoasted sesame seeds.

Tahini (Sesame Seed Sauce)

The Middle Eastern kind is called Tahini and is made from ground, toasted sesame seeds.

Substitutes for Sesame Pastes

Some people say you can substitute peanut butter for Tahini. Ugh.

Storage Hints for Sesame Pastes

Store in refrigerator in closed jar for up to 3 months to prevent the fat in it from going rancid. If the oils and solids separate during storage, just stir them back together.

Language Notes about Sesame Pastes

Tahini comes from an Arabic word meaning "to grind".
