Semisweet Chocolate
In American law, semi-sweet chocolate can contain from 15 to 35 percent chocolate liquor. It is slightly sweetened.

Extra cocoa butter is usually added. The best brands will list cocoa butter as the only fat used in making the product.

The chocolate is dark.

Substitutes
Bittersweet chocolate plus a small amount of sugar.
