Coquelet

Poussin is fancy French name used for a young chicken around 4 weeks old. In plain old English, we would probably just say "spring chicken." The meat of a poussin is very lean and so often recommended to weight-watchers trying to reduce fat intake. Poussins are usually about 1 pound (450 g) in size.

You will generally find these only at fancier butchers or gourmet stores. It is sometimes mistakenly said to be the same as Cornish Game Hen.
