 Flat Bone Ribs
Pork Button Ribs are not really ribs. Rather, they are a cut of the last 4 to 6 bones of the backbone from the spinal area at the back end of the pig, just before the hip area starts.
Further up on the pig, ribs will be attached to the backbone. Here, in this area, they aren't. Thus, there are no proper ribs here.
