All rights reserved and enforcedPickled Onions are onions that have been pickled in vinegar to preserve them. The onions used are smallish ones, as opposed to Spanish-onion size. The onions are pickled peeled, but whole. There are many different recipes and styles, even ones now that are spicy with chiles, curried, etc. You can also make fancier versions, such as shallots pickled in sherry and white wine vinegar. Very small Pickled Onions are called Cocktail Onions. When a martini has a Cocktail Onion in it, it is called a Gibson. The main style difference is English versus North American. English-Style Pickled OnionsEnglish-style Pickled Onions are very crisp and crunchy, and have a very sharp taste that stands up well to sharp, full-flavoured English cheeses. They are brownish, because they are pickled in malt or apple cider vinegar, with brown sugar, salt and black pepper added to the mix. North American-Style Pickled OnionsNorth American store bought Pickled Onions tend to be quite bland compared to the English ones made commercially. Plain, white vinegar is used, giving a harsh taste. They tend to be soft; some can be almost spongy.Cooking Tips See Also:Cocktail Onions, Martini, Onions, Pearl Onions, VinegarOther entries for:PicklesBranston Pickle, Caperberries, Capers, Chutney, Cocktail Onions, Cornichons, Kimchi, Pearl Onions, Pickle Juice, Pickled Eggs, Pickled Onions, Pickled Walnuts Other entries for:PreservesJams, Jelly, Mostarda di Cremona, Olives Related RecipesPickled Onion Relish |
