    
Pavé d'Auge Cheese
Pavé d'Auge is a generic name for a square, flat, washed-rind cheeses made in the Auge area of France.
The cheeses are semi-soft made from raw cow's milk. They are square, about 5 inches (12 1/2 cm) long on each side, about 2 1/4 inches (6 cm) thick, and weigh around 1 pound (450 g.) The rind is orangish-red. Inside, the cheese has tiny holes in it.
It takes 6 US quarts (6 litres) of milk to make 1 cheese. They are aged 2 to 4 months. Mini-ones are also made now, aged about 1 month.
Pavé d'Auge Cheese is often made by the same producers who make Pont-l'Evêque Cheese.
