Northern Shrimp

The shrimp are all born as males, but sometime between 2 1/2 years old and 4 years old, they switch sex to become females. They average 2 to 4 inches in length (5 to 10 cm.)
When alive, the shrimp's tail is a reddish pink. When cooked, the tail turns opaque white with pinkish tinges. The shrimps are prized for their sweet, crisp, delicate flesh.
Northern Shrimp have moister flesh than shrimp which inhabit warmer waters.
Northern Shrimp is used in various Japanese Sashimi dishes such as Ebi.
