Maasdam Cheese

Made from cow's milk, it is aged for at least 4 weeks. It has a smooth yellow rind, which is sometimes waxed like Gouda. It is made in 13 and 26 pound (6 and 12 kg) wheels.
Inside, the cheese is pale yellow and semi-firm with large holes. The texture is creamy. The taste is nutty.
Compared to Emmenthal, Maasdam has a sweeter taste and more moisture, making it more pliable.
Like North American Swiss, Maasdam was designed to be less expensive than Emmenthal. The Dutch producers, however, ended up with a cheese that is more flavourful and interesting than North American Swiss.
Maasdam is sold under various brand names such as Bergumer, Meerlander, Westberg and the brand that started this type of cheese, Leerdammer.
Generally 45% fat content.
