Before tomatoes were added to the concept, the term Ketchup meant a sauce, generally a vinegary one, that you bought in a bottle. There are still many different types of Ketchup. Two of the oldest are Walnut Ketchup and Mushroom Ketchup. These have been joined now by more exotic ingredients such as Mango Ketchup, and Baron's Banana Ketchup, made in St Lucia. Brits are still culturally aware of the different kinds that are possible. To this day, they still often refer to Ketchup as "Tomato Ketchup" even though, truth to tell, there might be 1 bottle of Mushroom Ketchup on the grocery store shelf, and 99 different brands of Tomato Ketchup. When North Americans hear the phrase "Tomato Ketchup", though, they get this strange look on their faces that seems to say, "Uh oh. Why are they clarifying the word ketchup? Don't tell me they're going to get this wrong, too." In North America, Ketchup will always be tomato based, made of tomatoes with spices, sweetener and vinegar. While you can get tomato-based Ketchups that are kosher, sugar-free (for diabetics and the low-carb people), spicy, roasted garlic-flavoured, etc, anything that isn't based on tomatoes and doesn't strive to taste, look and pour like tomato-based Ketchup would be considered as far from Ketchup as Apple Butter is from Butter. In fact, in America, what constitutes Tomato Ketchup is regulated in America by the Food and Drug Administration (FDA.) Tomato Ketchup is also still often called tomato sauce in the UK and other Commonwealth countries, but not Canada, which is very American in its speech and outlook. In North America, and in Asian cooking, tomato sauce would be something you would use in cooking, but not put on the side of your plate. This differs from Ketchup in that while you might put a splodge of Ketchup in something you are making, such as homemade baked beans, it's primary purpose is as a condiment to go on the plate.

It's a myth that "ketchup" is always made out of tomatoes. The first ones were made with mushrooms and anchovies, and many speciality ones being made now don't use tomatoes, either.
