Iwakuni Sushi

To make Iwakuni Sushi, rice is cooked and flavoured. Then lotus root, eggs and chrysanthemum petals are mixed in, then pickled, deboned Spanish mackerel and horse mackerel are mixed in as well.

The mixture is spread on top of plain cooked rice, the pressed down, then cut into squares to serve.
