Gevrik Cheese is a mould-ripened cheese from Cornwall, England.
Though it is made from whole goat's milk, it has a light, mild taste that is almost lemon-like, with none of the goat-like smell or taste that puts some people off goat cheeses.
The cheese gets more creamy as it ripens.
Sold in 2 1/2 oz (70 g) rounds, Gevrik Cheese is made by Coombe Castle International.
