Eye of the Goat Beans
Eye of the Goat Beans are related to cranberry beans and are a runner type bean.
They are round with a pinky beige background. They have curved brown stripes on them that some people feel make the bean resemble an eye.
Occasionally while growing Eye of the Goat Beans a few blue and purple beans will come out.
They cook up with a creamy texture and good flavour. They also keep their shape and colour after cooking.
Eye of the Goat Beans are good in soups, salads, and chili.
Cooking Tips
Simmer unsoaked beans for 2 to 2 1/2 hours.
Pressure cook soaked beans for 18 to 25 minutes.
A very tasty pot liquor is produced by the Eye of the Goat Beans.
