Walnut and Carrot Salad

Ingredients

1 Orange (small)
2 tablespoons Lemon Juice
3 tablespoons Oil
1 clove Garlic
3 oz Walnuts (whole, shelled)
1 pound Carrots
1 Onion (small, sliced)
1 bunch Watercress
1/3 cup Raisins





Directions



Wash the carrots, peel, and grate them coarsely. Set aside.

Make the dressing from the zest from the orange, the juice from the orange, the lemon juice, the oil, the garlic and 1/3 of the walnuts. Put it in a blender to whiz it smooth. Adjust taste with salt and pepper.

Make the salad by tossing together the carrot, the onion, the remaining whole walnuts, the raisins and the fresh coriander. Serve the salad, and allow your guests to dress it themselves with the dressing.
