Red Berry Clafoutis

Use red berries such as raspberries, strawberries, red currants, etc. Come to think of it, there's actually no reason the berries have to be red, but a mixture of at least two is nice.

Use a wide, shallow ovenproof dish about 9 x 2 inch (23 x 5 cm).


Ingredients

1 cup Flour
3 Eggs
1 cup Milk
1/3 cup Sugar
1 teaspoon Vanilla
2 tablespoons Butter
1/2 pound Berries





Directions


Cooking at: 400 F / 200 C / Gas Mark 6

Start heating your oven. Wash and prepare the berries.

Mix in a bowl half the milk and the eggs, then add the flour. When it's a thick, relatively smooth batter, add the sugar, vanilla and the remaining milk.

Put the butter in an ovenproof dish, and put it in the oven to heat the dish until the butter is melted. Remove from the oven, and pour the batter in right away, then sprinkle the fruit over top. Bake for 30 to 40 minutes. Remove from oven. Leave in dish, and sprinkle with a bit of sugar.
