Strawberry and Olive Salad

Estimated Prep Time: 25 minutes

This is a fabulous salad to serve to play with people's minds: your friends won't know if it's a dessert or a salad. With the combination of sweet, sour and salty tastes, it's very much along the lines of Medieval or Roman food.

It's probably only worth making this when strawberries are in season.

In place of basil leaves, you can use mint leaves.

Because this is such an eccentric salad, it's worth doing it right and using real black olives, not the tinned ones.

Ingredients

2 pounds Strawberries
10 Black Olives
10 Basil (leaves, fresh)
1 teaspoon Red Wine Vinegar
2 teaspoons Balsamic Vinegar
1 teaspoon White Pepper
1/2 teaspoon Sugar
2 tablespoons Olive Oil
1/2 teaspoon Salt

Directions

Mix all the ingredients except for the leaves and the strawberries in a medium-sized bowl.

Wash the strawberries, hull them and slice them. Add to the salad bowl, and toss, along with the leaves.

Serve room temperature. You can make this up to an hour or two ahead, to give the flavours time to marry.
