Corn Relish

Number of servings: 8 cups
Estimated Prep Time: 20 minutes
Estimated Cooking Time: 45 minutes

Non-iodized salt is best for preserving, but use what you have.

If you are using a coarse sea salt, increase salt amount to 2 tbsp.


Ingredients

6 cups Corn Niblets (frozen)
2 Onions (peeled, chopped finely)
1 Red Pepper (chopped finely, seeds removed)
1 Green Pepper (chopped finely, seeds removed)
1 cup Cabbage (chopped coarsely)
2 cups Cider Vinegar
1 cup Sugar
2 tablespoons Dry Mustard
1 1/2 tablespoon Salt
1/4 teaspoon Ground Pepper





Directions



Combine ingredients in a large pot, bring to the boil, reduce heat and simmer uncovered for half an hour. Stir occasionally.

Ladle into hot, sterilized mason jars, and seal them leaving headspace of 1/4 inch (5 mm).

Process 15 minutes in a boiling water bath.
