Tomato Onion Relish

Number of servings: Makes 4 cups
Estimated Prep Time: 15 minutes
Estimated Cooking Time: 2 1/2 hours

Instead of the Tabasco, you can use any other hot sauce, or about 1 teaspoon of dried hot pepper flakes, or 1/2 teaspoon cayenne.

Instead of cider vinegar you can use white vinegar.


Ingredients

1 can Tomatoes 28oz/800ml
8 Onions (large, peeled, chopped)
1 1/2 cup Cider Vinegar
1 cup Sugar
1 teaspoon Salt
1 teaspoon Mustard Seed
1/4 teaspoon Ginger (ground)
1/4 teaspoon Nutmeg
1/4 teaspoon Allspice
Tabasco





Directions



Prepare the onions. Put all the ingredients into a large pot and stir. Bring to a boil, then simmer uncovered for about 2 hours or until thick. Towards the end, as it starts to get thick, stir more frequently so that it won't scorch on the bottom.

Ladle into hot mason jars, seal and process in boiling water bath for 15 minutes.
