Rhubarb Sauce

Most rhubarb recipes will have you stew them in sugar. If you want to make a less sweet version, try this version.

This is really good with pork, lamb and pâtés, or use as you would a chutney.


Ingredients

few stalks Rhubarb (chopped)
1 Onion (chopped, finely)
1 Orange
1 teaspoon Ginger (chopped, finely)
1/4 cup Water





Directions



Put in a saucepan the zest of the orange, plus the juice. Add all the other ingredients.

Stew all over low heat until it thickens into a sauce and all ingredients are soft. Should take just under 25 minutes. Just needs stirring once or twice.
