Broccoli Soup

Number of servings: 2-3 good sized bowls
Estimated Prep Time: 15 minutes
Estimated Cooking Time: 35 minutes

Don't forget to peel and use the broccoli stalks as well as the florets.


Ingredients

1 Onion (chopped)
1 Potato (peeled, chopped)
4 cups Vegetable Stock
10 oz Broccoli (chopped)





Directions



Fry the onion and the potato in a bit of oil in a large saucepan for 4 minutes.

Add the stock, and simmer for 10 minutes.

Add the broccoli, and simmer for another 15 minutes.

Whiz it all through a food processor or blender till smooth, then reheat and serve.
