Grace Oulton's Wheat Germ Muffins

Wheat germ is very good for you, but not very tasty. This recipe, with the brown sugar and raisins, is how Nanny would entice us into eating it.

You can use melted shortening instead of oil; you can substitute currants or dates for raisins.

Optional: nuts such as walnuts.


Ingredients

1 cup Buttermilk
1 cup Rolled Oats
1 Egg
1/2 cup Oil
1 cup Flour (sifted)
1/2 cup Wheat Germ
1/2 cup Raisins
1/2 cup Brown Sugar
2 teaspoons Baking Powder
1/2 teaspoon Baking Soda
1/2 teaspoon Salt





Directions


Cooking at: 375 F / 190 C / Gas Mark 5

Butter your muffin tins (about a dozen).

Combine sour milk, oil, oats and egg. Set aside.

In another bowl, mix flour, wheat germ, baking powder, baking soda and salt; then stir in the raisins.

Turn the flour mixture all at once into the milk and oat mixture, then stir until just blended; leave slightly lumpy.

Spoon into muffin tins and bake for 15 to 20 minutes.
