Blender Mayonnaise

Number of servings: This fills a Jam-sized mason jar.
Estimated Prep Time: 10 minutes


The less taste the oil has, the better your mayonnaise will taste: in other words, don't use good olive oil.

Instead of lemon juice, you can use white wine vinegar.

Store in fridge; use within 2 weeks.


Ingredients

2 tablespoons White Wine Vinegar
2 tablespoons Lemon Juice (fresh)
1 Egg
1 Egg Yolk
1/2 teaspoon Salt
1 teaspoon Mustard (dry)
1 teaspoon Sugar
2 cups Corn Oil





Directions



You can make this in a food blender or processor.

Add all the ingredients to the blender except the oil.

Pulse 4 or 5 times, then turn processor on medium to high and drizzle the oil in very slowly. As you proceed with a steady stream of oil, you will notice that at about 1 cup (8 oz / 250 ml) the sound changes as it thickens. Keep drizzling until the oil is all in.

At this stage, open and taste. You may want to sweeten it with a teaspoon or sugar or honey.
