Demerara Sugar

Demerara is less sweet than white sugar, but makes up for it with a yummy, caramel or toffee aftertaste.

It is a coarse sugar with yellowish-brown crystals.

In other parts of the world, Demerara is sold unpurified, and some say this has the best taste. Because this unpurified state may contain moulds, though, it has to be sold refined in North America and in the UK, so much of what we get and pay for is far less than the real thing.
