Danbo Cheese

Danbo Cheese is a semi-firm cheese made in Denmark from cow's milk.

It is somewhat like North American "Swiss Cheese."

The cheese has a yellow rind coated in red or orange wax. Inside, the cheese is elastic, and a pale yellow with small holes in it, with a sweet, nut-like flavour. One version is made with caraway seed added.

Danbo Cheese is aged from 1 1/2 to 5 months. The rind is smear-ripened. As it ages, the mild taste gets sharper. The cheese is generally rectangular shaped, but some producers make in wheels.

One brand of Danbo Cheese is called "Klovborg."
