Cane Jelly
Cane Jelly is a jelly made from sugar cane juice, but it is not overly sweet.

It is available in jars ranging from small to 5 US gallons (19 litres.)

It has a spreadable, smooth texture, and can be used as a glaze.

There are many different types:

  • Dark and lite, which has a more pronounced taste;
  • Barbeque cane jelly is spiced to use as a barbeque glaze or marinade;
  • Pepper cane jelly has chopped peppers in it. Can also be used as a condiment at the side of the plate, or as an hors d'oeuvre on crackers, etc.

Literature & Lore
Cane Jelly is one of two official jellies of the State of Louisiana (the other one is Mayhaw aka Hawthorne Jelly.)
