Brie Noir is a dark, aged version of Brie.
It has a dark brown crust, and is a caramel coloured to very dark brown inside.
The texture is crumbly.
It is aged 8 to 10 months in a cave.
Brie Noir has a bitter, acidic taste. Locals sometimes dip it in their café au lait at breakfast.
Sometimes Brie Noir is aged only 4 months to make it more appealing to first timers.
