    
Banana Peppers
 Banana Peppers © Denzil Green These look a lot like yellow wax peppers, which are quite hotter. Banana peppers are sweeter. They are from 4 to 6 inches long, though some hybrid varieties will grow 8 to 10 inches. The colour changes from yellow to orange to red as they mature. They have a tang, but no kick.
They were a favourite food item of my grandfather from Nova Scotia. He would buy jars of them, pickled, and eat them straight, and at the time, in 1960's small-town Ontario, this was thought quite exotic and daring.
The heat level is 500 Scoville units.
Cooking Tips
These are good for pickling and frying, as they don't contain as much water as, say, a bell pepper does.
