À la
You can't dissect "À la" terms too closely or think about them too much, or they all break down.
For instance, "À la Italienne" means "in the Italian style". But which Italian style? Italian cooking is far more diversified than French is. Where someone in the north might reach for butter, someone in Tuscany might reach for butter and oil and someone in the south would reach for oil only. Basically, you have to ask yourself, what would the people who popularized this term have perceived, rightly or wrongly, as the general aspects of the cooking that was summed up in this particular style of cooking or presentation.
Mostly, the terms only make sense if you know the history of the dish, the cultural or geographical allusion that is being made.
If you do master all the terms, it's meant to describe to you what else comes on the plate to eat with the main item -- or how the main item was prepared. Menus, though, almost always spell this out now anyway, because it's almost impossible for anyone not in the classical cooking field to memorize all the terms.
