Akide are small hard Turkish candies sold unwrapped in jars.
They are made from a sugar syrup, with citric acid and cream of tartar added, and flavoured with ingredients such as cinnamon, bergamot orange, lemons, mint, rosewater or fruits such as strawberries, etc.
The flavoured mixture is boiled until it is thick enough to form into a rope, then it is cut, shaped and let cool and harden.
Some Akide Candy are clear; some are coloured. Most are translucent, but there is also a solid white version that is common.
History
Akide were created sometime after refined white sugar was introduced in Turkey.
